What does it mean? It's a wedding cake in France - a tower of profiteroles, set with caramel. It seemed a good idea in 1978, when we opened our restaurant.

FAULTS

Sorry it can happen, and we apologise in advance, if you get a damaged bottle, or with a fault, like being corked. Please tell us and we'll refund the price and a proportion of the carriage cost you have paid. We may ask you to return the wine so that we may inspect it.

But we will not refund a purchase just because you didn't like it! We love to offer advice. The more we know your tastes the better we can supply you.

WINE SPECTATOR... California magazine, goes in for masses of blind tastings. Enterprisingly cosmopolitan, its recommendations are trustworthy. At www.winespectator.com there is a massive database of tasting notes.

WINE INTERNATIONAL... UK magazine with useful notes. And each year it organises the WINE CHALLENGE. Plenty of gongs, but trophies, gold and silver medals are well worth following. Lesser awards - less useful!

THE VINE ... Subscription monthly by Clive Coates. Good expert info of the old school. Not taken in by those high-extract wonder wines. In contrast to …

ROBERT PARKER ... He’s the big influence. But I get the impression he seems to like gutsy more than subtlety in wine. And can taste wines very early. Blame him for the marks out of 100, obsession.

www.wine-searcher.com... A super website (brings lots of enquiries), run by Anne Welch, which puts together a giant database of the lists of 1700 or more of the world’s best merchants - and us! This way you can check on our prices.
